  • sifted cake flour*
  • sugar
  • baking powder*
  • salt* - 1 tsp
  • milk - 3/4 c
  • Crisco - 2/3 c
  • eggs - 3 item
  • vanilla - 1 tsp
  • cornstarch - 2 Tbsp
  • dash of salt - 1 item
  • water - 3/4 c
  • egg yolks, slightly beaten - 2 item
  • lemon juice - 3 Tbsp
  • grated lemon peel - 1 tsp
  • butter - 1 Tbsp

How to make sunshine cake:

Lemon Filling:3/4 c. sugar2 Tbsp. cornstarch dash of salt3/4 c. water2 egg yolks, slightly beaten3 Tbsp. lemon juice1 tsp. grated lemon peel1 Tbsp. butter In mixing bowl, combine flour, sugar, baking powder and salt. Add 3/4 cup milk and Crisco. Beat by hand or medium speed of electric mixer for 2 minutes. Add eggs, the other 1/2 cup milk and vanilla. Beat 2 more minutes. Pour into 2 greased and floured cake pans. Bake at 350° for 35 to 40 minutes.

Lemon Filling: In saucepan, combine sugar, cornstarch and dash of salt. Add water, egg yolks and lemon juice and cook over medium heat until thick, stirring constantly. Remove from heat and add grated lemon peel and butter; stir. Put this between layers of cake when cake is done and warm. Then frost over with a Seven Minute Frosting.

*Self-rising flour may be used in cake instead of cake flour, salt and baking powder.
