Ingredients/Components
- eggs, beaten - 3 item
- mayonnaise - 1 c
- large chopped onion - 1 item
- Hidden Valley Ranch dressing mix - 1 pkg
- squash - 2 lb
- soda crackers, crumbled - 12 item
- shredded extra strong cheese - 1 c
- buttered cornbread crumbs - 1 item
How to make summer squash casserole:
Cut squash into 1/2-inch pieces and cook until barely tender (lightly salted). Drain. Lightly saute chopped onion. Mix ingredients 1 through 7 and place in 1 1/2 quart casserole dish (oiled). Cover with buttered crumbs. Bake in 350° oven about 35 minutes. This is a very popular covered dish item.Recipe categories: Squash, Vegetables, Casseroles.
