  • eggs, beaten - 3 item
  • mayonnaise - 1 c
  • large chopped onion - 1 item
  • Hidden Valley Ranch dressing mix - 1 pkg
  • squash - 2 lb
  • soda crackers, crumbled - 12 item
  • shredded extra strong cheese - 1 c
  • buttered cornbread crumbs - 1 item

How to make summer squash casserole:

Cut squash into 1/2-inch pieces and cook until barely tender (lightly salted). Drain. Lightly saute chopped onion. Mix ingredients 1 through 7 and place in 1 1/2 quart casserole dish (oiled). Cover with buttered crumbs. Bake in 350° oven about 35 minutes. This is a very popular covered dish item.
