Stuffed zucchini
Ingredients/Components
- oil - 1/4 c
- well beaten egg - 1 item
- chopped onion - 3/4 c
- Parmesan cheese - 1 c
- soft bread crumbs - 2/3 c
- ground beef - 1 lb
- salt and pepper to taste - 1 item
- oregano - 2 tsp
- tomato paste - 3 Tbsp
- chopped parsley - 2 Tbsp
- ham, chopped small - 1/4 lb
- medium zucchini, well cleaned - 8 item
How to make stuffed zucchini:
Preheat oven to 375°. Cut zucchini in half lengthwise and scoop out pulp, leaving about 1/4-inch thick shell. Chop pulp and set aside. Reserve shells.Heat oil in skillet and saute onions until soft. Add garlic and zucchini pulp. Saute about 5 minutes. Drain well.
Combine remaining ingredients with zucchini and allow to cool. Mix well.
Place zucchini shells in a well oiled baking dish. Fill with stuffing mixture. Sprinkle with additional Parmesan and dot with butter. Bake at 375° for 30 minutes. If tops become too brown, cover with foil during cooking. Serves 8.
