Stuffed sweet potatoes
Ingredients/Components
- cinnamon - 1/2 tsp
- butter or margarine - 2 Tbsp
- salt - 1/4 tsp
- nutmeg - 1/4 tsp
- chopped walnuts - 1/3 c
- marmalade - 1/4 c
- medium large sweet potatoes or yams - 6 item
How to make stuffed sweet potatoes:
Scrub potatoes, prick with fork and bake in 425° oven, 40 to 60 minutes, until tender. Cut a lengthwise slice from top of each potato. Remove skin from slices and put pulp into mixing bowl. Mash potatoes. Add butter, marmalade, salt, cinnamon and nutmeg. Mash until well blended. Spoon mixture into potato shells. Sprinkle chopped nuts on top. Makes 6 servings. Can be made ahead of time and placed in baking dish, refrigerated. Heat in 425° oven for 30 minutes or until heated through.Recipe categories: Lunch/snacks, Side dish, Yam/sweet potato.
