Stuffed summer squash
Ingredients/Components
- cracker crumbs - 1/4 c
- mashed potatoes - 1/4 c
- bulk sausage - 1/4 c
- summer squash - 3 item
How to make stuffed summer squash:
Cut squash in halves lengthwise. Cook for 2 minutes in boiling salted water. Drain them dry and remove the centers. Place them on a shallow buttered dish; fill with mixture of half sausage-meat and half mashed potatoes. Sprinkle cracker crumbs over the top; dot with butter. Bake for 30 minutes in a 350° oven.
