Stuffed peppers



  • green peppers - 1 item
  • tomato juice - 1 item
  • ground beef - 1 lb
  • chopped onions - 3 Tbsp
  • pepper - 1 tsp
  • salt - 1 tsp
  • rice - 1 c

How to make stuffed peppers:

Wash peppers and cut off tops. Set aside. Mix beef, onions, rice, salt and pepper. Fill peppers with meat mixture. Put 2 or 3 peppers in quart jar, depending on size of peppers. Fill with tomato juice and add salt. Process in pressure canner for 1 hour and 30 minutes. I like to omit some rice and add some oatmeal.
