  • large mushrooms about 8 - 1/2 lb
  • butter or oleo - 1/2 c
  • minced onion - 1/2 c
  • chopped parsley - 2 Tbsp
  • salt - 1/2 tsp
  • oregano - 1/4 tsp
  • dried bread crumbs - 1/2 c
  • garlic cloves - 2 item
  • grated Parmesan cheese - 1/4 c

How to make stuffed mushrooms:

Remove stems from mushrooms. Firmly chop stems. Reserve mushroom caps. In a 2-quart saucepan over medium heat in hot butter or oleo, cook stems, onion, garlic, parsley, salt and oregano until onion is tender, about 5 minutes. Stir occasionally. Mix in bread crumbs and cheese. Spoon mixture into mushroom caps. Place, stuffed side up, on a rack in broiler pan. Broil 8 minutes or until mushrooms are tender.
