Stuffed manicotti
Ingredients/Components
- salt
- water - 2 c
- snipped parsley - 4 Tbsp
- chopped onions - 1/4 c
- dash of pepper - 1 item
- slightly beaten eggs - 2 item
- ground beef
- parsley - 2 Tbsp
- basil leaves - 1 Tbsp
- small clove garlic, minced - 1 item
- cans tomato paste - 2 oz
- manicotti shells - 8 item
- grated Romano or Parmesan cheese - 2/3 c
- Add onions, garlic, tomato paste, water, parsley, basil, salt and pepper
How to make stuffed manicotti:
Sauce:1 lb. ground beef1/4 c. chopped onions1 small clove garlic, minced2 (6 oz.) cans tomato paste2 Tbsp. parsley1 Tbsp. basil leaves2 c. water1 1/2 tsp. salt dash of pepper Brown meat lightly; drain off fat. Add onions, garlic, tomato paste, water, parsley, basil, salt and pepper. Simmer, uncovered, about 30 minutes, stirring occasionally.Filling:1 1/2 lb. fresh Ricotta or cream-style cottage cheese, drained (3 c.)2/3 c. grated Romano or Parmesan cheese2 slightly beaten eggs4 Tbsp. snipped parsley1/3 tsp. salt dash of pepper Mix all filling ingredients together. Stuff into cooked as directed manicotti shells with a spoon. Pour half of the sauce into baking dish. Arrange shells and top with remaining sauce. Sprinkle with Romano cheese.
