  • cream cheese - 4 oz
  • stick butter - 1 item
  • lemon - 1 item
  • cloves garlic, chopped - 4 item
  • frozen chopped spinach - 1 pkg
  • fresh parsley for garnish - 1 item
  • fresh haddock

How to make stuffed haddock:

Preheat oven to 400°. Rinse haddock fillet; pat dry. Make a slice down fillet for stuffing. Microwave spinach to defrost. Squeeze out excess water. Brown garlic and butter in saucepan. Add spinach and cream cheese; mix well. Place haddock fillet in 13 x 9-inch pan. Squeeze lemon over fillet. Spoon spinach mixture over fillet. Bake in a preheated oven 20 minutes or until fish flakes with a fork. Garnish with fresh parsley and lemon.
