Stuffed fillet of sole
Ingredients/Components
- half and half - 4 oz
- stick butter - 1/2 item
- Dijon mustard - 1 item
- dash of paprika - 1 item
- salt to taste - 1 item
- white wine - 2 oz
- chopped chives - 1 item
- white pepper to taste - 1 item
- Italian bread crumbs - 1 item
- lemon, squeezed - 1 item
- large fillets of sole - 4 item
- spears asparagus - 12 item
How to make stuffed fillet of sole:
Wash fillets. Melt 1/2 of butter in a skillet on medium. Saute the fillets for 10 seconds on each side. Reserve the butter. Squeeze lemon over fish. Cook asparagus for 8 minutes. Lay fillets out flat. Add salt and pepper. Lay 3 asparagus spears in middle of fillet and roll fillets up. Secure. Grease a small baking dish and bake fillets for 35 minutes at 350°. Melt rest of butter and baste occasionally. In a small pan put wine, mustard, chives and stir until thick.
