Stuffed cherry tomatoes



  • pkg - 1 oz
  • salt - 1/4 tsp
  • white pepper - 1/8 tsp
  • cayenne pepper - 1/8 tsp
  • medium cucumbers - 2 item
  • cherry tomatoes - 2 doz

How to make stuffed cherry tomatoes:

Peel and seed the cucumbers. Chop finely and cover with salted ice water for 10 minutes. Drain well. Mix with cream cheese (at room temperature). Add seasonings. Seed and drain the tomatoes; do not peel. Take a thin slice from the bottom so tomatoes will stand upright. Stuff with the mixture.
