Ingredients/Components

  • butter - 2 Tbsp
  • egg - 1 item
  • ground beef - 1 lb
  • pepper to taste - 1 item
  • tomato juice - 1 c
  • salt to taste - 1 item
  • rice - 1/2 c
  • onion, chopped fine - 1 item
  • ground pork - 1/2 lb
  • medium can sauerkraut - 1 item

How to make stuffed cabbage:

Remove core from whole head of cabbage with a sharp knife. Scald the cabbage in boiling water. Remove a few leaves at a time.

Wash rice in cold water and stir into 2 quarts rapidly boiling water. Boil only 10 minutes and drain. Run cold water through rice in strainer. This rice is only half cooked now.

Saute onion in the butter. Chop coarsely the leftover leaves of cabbage and place on bottom of cooking pot or roasting pan, then make a layer of 1/2 the sauerkraut.

In bowl, mix together pork, beef, rice, egg and sauteed onions and add salt and pepper to taste. Place small amount of meat mixture on each cabbage leaf and roll up. Tuck in ends. Place in layers in pot or roaster.

For boiling, add water, then tomato juice and sprinkle with a little more salt and other half of sauerkraut. Cover with lid. Simmer for one and a half hours to two hours. Check in 1 hour.
