Ingredients/Components

  • stick butter - 1 item
  • bell peppers - 6 item
  • dash of salt and pepper - 1 item
  • small onion, chopped - 1 item
  • dash of basil - 1 item
  • dash of oregano - 1 item
  • eggs, slightly beaten - 3 item
  • ground chuck - 1/2 lb
  • water to cover - 1 item
  • can mushroom stems and pieces - 1 oz
  • chopped green onion tops - 1/2 c
  • Progresso bread crumbs - 1/2 c
  • grated Romano and Parmesan cheese - 1/4 c
  • slices white bread, moistened and squeezed - 2 item

How to make stuffed bell peppers:

Cut off tops of bell peppers; remove insides and boil 5 minutes. Drain. Saute onions, shallots and minced garlic in butter. Add meat and brown. Shred moistened bread with fingers into skillet. Add mushrooms and liquid, cheese, seasoning and bread crumbs. Remove from heat and stir in eggs, working quickly. Return to heat for 5 minutes.

Fill peppers. Sprinkle with prepared crumbs. Dot with butter and bake 15 minutes at 350°. Freezes very well in individual plastic bags.
