Ingredients/Components

  • sour cream - 1 c
  • salt - 1 Tbsp
  • butter - 1/4 c
  • egg, beaten - 1 item
  • pepper - 1/2 Tbsp
  • grated Cheddar cheese to sprinkle over 12 halves

How to make stuffed baked potato:

Bake 6 large potatoes 1 1/2 hours at 400 degrees. Cut lengthwise into halves. Scoop out the potato leaving the skin intact. Mash all the potatoes in a bowl and add all ingredients with the exception of the cheddar cheese and dash of paprika, till fluffy. Can add a small amount of milk if needed, but do not get this mixture too loose.

Refill the skins and top off with paprika and cheese. Return to oven and bake 350 degrees until cheese is melted and potatoes are hot. This takes a little longer than the ordinary baked potato but it's very good.

These can be prepared in advance and frozen. But don't add the cheese and paprika until you put into oven.
