Strawberry nut bread



  • brown sugar
  • baking soda - 1 tsp
  • egg whites - 6 item
  • grated lemon rind - 4 tsp
  • canola oil - 2/3 c
  • sliced strawberries fresh or frozen - 3 c
  • chopped almonds or walnuts
  • sifted wheat flour - 3 c

How to make strawberry nut bread:

Preheat oven to 350°. Grease and flour 2 standard loaf pans. Sift together flour and baking soda. In a large bowl, lightly beat egg whites. Mix in oil and rind, using your hands. Stir in brown sugar and flour mixture until just blended. Fold in strawberries and nuts. Do not overblend or bread will be tough.

Pour batter into pans and bake on the center of the rack for 1 hour or until an inserted toothpick comes out clean. Let cool in pans for 10 minutes before turning out on a wire rack to finish cooling.
