  • graham cracker crumbs - 1/2 c
  • sugar - 1/4 c
  • cornstarch - 1/4 c
  • Cool Whip
  • lemon juice - 2 Tbsp
  • grated orange peel - 2 tsp
  • slivered almonds - 1 c
  • unsalted butter - 6 Tbsp
  • quartered strawberries

How to make strawberry icebox pie:

For Filling:5 c. quartered strawberries1 c. sugar1/4 c. cornstarch2 Tbsp. lemon juice2 tsp. grated orange peel1 1/2 c. Cool Whip For Crust: Preheat oven to 350°. Butter a 9-inch glass pie pan. Coarsely chop almonds. Add graham cracker crumbs and sugar. Process or stir until finely ground. Add butter. Process or stir until evenly moistened. Press crumb mixture onto bottom and up sides of dish. Bake crust until set, about 12 minutes. Cool completely.

For Filling: Place 2 cups strawberries in medium saucepan. Mash strawberries with potato masher until chunky. Add sugar, cornstarch and lemon juice. Stir over medium-high heat until sugar dissolves and mixture boils and thickens, about 3 minutes. Transfer mixture to bowl. Cool to room temperature. Stir in remaining 3 cups strawberries and grated orange peel. Mound filling in crust. Chill pie until cold (about 2 hours). Top with Cool Whip.
