Strawberry chiffon pie
Ingredients/Components
- unflavored gelatin - 1 Tbsp
- sugar, divided - 1 c
- salt - 1/2 tsp
- milk, scalded
- eggs, separated - 4 item
- pkg - 1 oz
- lemon juice - 1/2 c
- fresh strawberries - 2 c
- 9-inch baked pie shell - 1 item
How to make strawberry chiffon pie:
Mix gelatin, 3/4 cup sugar and salt in top of double boiler. Stir in milk, stirring with whisk until gelatin is dissolved. Stir in well beaten egg yolks while stirring briskly. Cook until mixture coats a spoon. Remove from heat. Divide between 2 bowls. Add cream cheese and half the lemon juice to one and beat until smooth. Pour into pie shell.In second bowl, add rest of lemon juice. Chill both mixtures until partially thickened. Slice berries and place on cheese layer in shell. Beat rest of sugar into stiffly beaten egg whites. Fold into lemon mix in second bowl and pile over berries. Chill for several hours. Keep in fridge, not at room temperature.
