  • butter, softened - 1 c
  • sugar
  • vanilla - 1 tsp
  • salt - 1 tsp
  • chopped nuts - 1/2 c
  • flour - 3 c
  • baking soda - 1/2 tsp
  • cream of tartar - 1 tsp
  • lemon extract - 1/4 tsp
  • cottage cheese - 1/2 c
  • strawberry jam - 1 c
  • eggs Egg Beaters - 4 item

How to make strawberry bread:

Heat oven to 350°. Grease bottoms only of 2 (9 x 5 x 3-inch) pans. In large bowl, cream butter, sugar, vanilla and lemon extract. Add Egg Beaters. Add salt, cream of tartar and baking soda. Blend together jam and cottage cheese. Add to mixture. Add dry ingredients. Stir in nuts. Pour into pans and bake for 50 to 60 minutes.
