Ingredients/Components

  • cream cheese - 8 oz
  • sour cream
  • melted butter - 3 oz
  • plain flour - 2 Tbsp
  • salt and fresh ground pepper - 1 item
  • cheese crackers - 6 oz
  • Filling:4 eggs, separated
  • Blue Stilton, mashed - 8 oz

How to make stilton cheesecake:

Filling:4 eggs, separated5 fluid oz. sour cream2 Tbsp. plain flour8 oz. cream cheese8 oz. Blue Stilton, mashed salt and fresh ground pepper Crumble crackers to crumbs. Add butter; press into the base of a loose-bottomed buttered 7-inch cake tin. Chill. Whisk egg yolks until pale and thick. Fold in sour cream. Mix in mashed Blue Stilton with a fork.

Whisk egg whites stiff and fold in with metal spoon. Season with salt and pepper. Spoon mixture onto crumb base and smooth top. Bake at 350° (180° C) or on gas mark 4 for 1 hour, or until risen and golden and firm to the touch. Cover with foil if top browns too soon. Remove from oven and cool on wire rack. Chill before serving. Serves 10.
