Steamed brown bread
Ingredients/Components
- salt - 1 tsp
- soda - 1 tsp
- buttermilk - 1 c
- egg, well beaten - 1 item
- sifted all-purpose flour - 1/4 c
- whole wheat flour - 2 c
- corn meal - 1 c
- sweet milk - 1 c
- molasses Brer Rabbit - 1 c
How to make steamed brown bread:
Step 1: Sift flour (1/4 cup), salt and soda in bowl. Add meal and whole wheat flour.Step 2: Combine egg, both milks and molasses. Pour all into dry ingredients (one cup chopped dates or currants may be added).
Step 3: Pour into well-greased cans, filling about 1/2 full. If cans don't have lids, tie foil over tops with string.
Step 4: Steam for 3 hours. Set cans on rack in large kettle or boiler in boiling water up to 2/3 high on cans (will have to add more water).
Step 5: Remove cans from water and uncover. Put in slow oven and let dry out for 15 minutes. Remove from molds. Can serve hot or reheat by wrapping in foil. (Peanut cans are good to use, they have lids.)
