Steak diane



  • Worcestershire sauce - 1 item
  • fresh parsley, chopped - 1/4 c
  • juice of 1/2 lemon
  • olive or peanut oil - 1 item
  • cornstarch, blended with 1 Tbsp - 1 Tbsp
  • minced shallots or scallions - 1/4 c
  • steaks, cut 1/2 inch thick from top loin strip or tenderloin - 4 (8
  • green peppercorns, packed in water or fresh ground pepper
  • drops of soy sauce - 1 item
  • small pitcher of oil and 1 stick butter
  • cognac and Port or Madeira - 1 item

How to make steak diane:

Trim steaks and pound between pieces of wax paper to reduce them to 1/4 inch thick. Crush drained green peppercorns with spoon and spread on both sides of steak or use ground black pepper. Add a few drops of soy sauce and olive oil.

Saute steak in 1 tablespoon oil and 2 tablespoons butter. Saute 30 to 40 seconds per side or to your taste. Remove steak. Add another spoonful or two of butter and cook shallots or scallions and parsley for a moment. Then add bouillon mixture, a few drops of Worcestershire sauce and the juice of half a lemon. Add drops of cognac and Port or Madeira. Bathe steaks in the sauce, turning with fork until heated and done to your taste. We like to serve this with mashed potatoes and green peas.
