Squash relish

Squash relish



  • sugar - 3 c
  • salt - 1/4 c
  • celery seed - 2 tsp
  • medium onions - 4 item
  • white vinegar
  • green peppers - 2 item
  • turmeric - 2 tsp
  • large yellow butter squash - 6 item

How to make squash relish:

Cover squash, onions, peppers and salt with water. Soak 3 to 4 hours; drain well, then combine sugar, vinegar, celery seed and turmeric. Bring to a boil; simmer 3 minutes. Add vegetables to vinegar mixture and bring to boiling point; put in jars; seal. Makes approximately 6 pints.
