Ingredients/Components
- eggs - 2 item
- salt - 2 tsp
- fine bread crumbs - 2 c
- black pepper - 1 tsp
- squash - 2 lb
- large onion, grated - 1 item
How to make squash croquettes:
Cook squash until tender, then drain well; mash squash and add other ingredients. Add more bread crumbs if necessary to handle. Form into oblong croquettes and roll in corn meal. Fry in deep fat until brown.Recipe categories: Squash, Low fat, Vegetables.
