Squash casserole
Ingredients/Components
- eggs, beaten - 2 item
- bread crumbs - 1 item
- chicken bouillon cubes - 2 item
- small onion - 1 item
- sharp Cheddar cheese - 4 oz
- to 10 small squash - 8 item
How to make squash casserole:
Boil squash in covered saucepan until soft. Drain and save liquid, then mash squash. Dissolve bouillon in 1/2 cup of squash liquid. Saute onion in butter until clear. Add onion, bouillon and 2 ounces of cheese to squash. Cool. Beat eggs and fold into squash mixture. Pour into buttered casserole and top with remaining cheese. Bake in 350° oven for 30 minutes.
