Squash casserole



  • salt - 1 tsp
  • egg, beaten - 1 item
  • bread crumbs - 1/4 c
  • medium onion - 1 item
  • black pepper - 1 tsp
  • stick oleo - 1/2 item
  • green bell pepper - 1/4 c
  • squash - 6 c
  • pan sausage - 3 bacon
  • ??? grated cheese - 1/4 item

How to make squash casserole:

Wash squash; cut stems from the ends. Cut squash, pepper and onion. Place in cooking utensil with enough water to cover squash. Cook until squash is tender, then add 3 strips of bacon or pan sausage and cheese. Add egg and seasonings. Place in greased casserole dish; cook for about 30 minutes. During last 5 minutes of cooking, sprinkle top with bread crumbs.

An excellent dish to prepare days in advance and place in freezer until time to place in oven. Allow more time for cooking when it is frozen.
