Ingredients/Components

  • sour cream - 1 c
  • salt - 3/4 tsp
  • butter - 3 Tbsp
  • water
  • grated carrot - 1/2 c
  • can cream of chicken soup - 1 item
  • pepper to taste - 1 item
  • grated onion - 2 Tbsp
  • yellow squash - 4 c
  • herb seasoned stuffing - 2 c

How to make squash casserole:

Cook squash in salted water until tender, about 10 minutes; drain and mash. Add onions, carrots, soup and sour cream. Salt and pepper to taste. Butter 2-quart shallow baking casserole (9 x 12-inch). Sprinkle half the stuffing on bottom of casserole. Cover with squash mixture. Top with remaining stuffing. Dot with butter and bake at 350° for 30 minutes.
