Squash casserole
Ingredients/Components
- sour cream - 1 c
- salt - 3/4 tsp
- butter - 3 Tbsp
- water
- grated carrot - 1/2 c
- can cream of chicken soup - 1 item
- pepper to taste - 1 item
- grated onion - 2 Tbsp
- yellow squash - 4 c
- herb seasoned stuffing - 2 c
How to make squash casserole:
Cook squash in salted water until tender, about 10 minutes; drain and mash. Add onions, carrots, soup and sour cream. Salt and pepper to taste. Butter 2-quart shallow baking casserole (9 x 12-inch). Sprinkle half the stuffing on bottom of casserole. Cover with squash mixture. Top with remaining stuffing.
