Ingredients/Components

  • sugar - 2 Tbsp
  • chopped pecans - 1/2 c
  • stick butter - 1/2 item
  • egg, beaten - 1 item
  • chopped onion - 1/2 c
  • salt and pepper to taste - 1 item
  • mayonnaise - 1/2 c
  • cracker crumbs - 1/2 c
  • sharp grated cheese - 1/2 c
  • yellow squash, cooked - 1 lb

How to make squash casserole:

Mix all ingredients except crumbs and pecans; pour in a buttered dish. Bake 20 minutes in a 375° oven. Remove from oven and top with crumbs and nuts. Bake an additional 10 to 15 minutes. May also be doubled, if so, use a 9 x 13-inch baking dish. You may substitute the following for low calorie: Egg Beaters, low fat cheese, margarine for butter, plain yogurt for mayonnaise and artificial sweetener.
