Squash casserole
Ingredients/Components
- sugar - 2 Tbsp
- chopped pecans - 1/2 c
- stick butter - 1/2 item
- egg, beaten - 1 item
- chopped onion - 1/2 c
- salt and pepper to taste - 1 item
- mayonnaise - 1/2 c
- cracker crumbs - 1/2 c
- sharp grated cheese - 1/2 c
- yellow squash, cooked - 1 lb
How to make squash casserole:
Mix all ingredients except crumbs and pecans; pour in a buttered dish. Bake 20 minutes in a 375° oven. Remove from oven and top with crumbs and nuts. Bake an additional 10 to 15 minutes. May also be doubled, if so, use a 9 x 13-inch baking dish. You may substitute the following for low calorie: Egg Beaters, low fat cheese, margarine for butter, plain yogurt for mayonnaise and artificial sweetener.Recipe categories: Squash, Side dish, Casseroles.
