Ingredients/Components

  • stick margarine - 1 item
  • eggs, beaten - 2 item
  • Ritz crackers - 1 item
  • salt and pepper to taste - 1 item
  • yellow squash, cut up - 3 lb
  • sharp cheese - 1 c
  • large carrots, grated - 3 item
  • large onions, cut up - 2 item

How to make squash casserole:

Cook together squash, carrots and onions until tender; drain and mash. Add margarine, cheese, eggs and crumbled crackers (save enough for top). Pour into ungreased casserole. Top with cracker crumbs. Sprinkle with a little dried parsley. Bake in a 350° oven for 40 minutes or until set. (Leave cover off.) Use about a 12 x 10-inch Pyrex dish. Keeps in refrigerator for 2 to 3 days. Freezes well.
