  • pkg - 1 oz
  • sour cream - 1 c
  • melted butter - 1/2 c
  • shredded carrot - 1 c
  • can cream of mushroom soup - 1 item
  • medium onion, chopped - 1 item
  • any squash cubed approximately 6 c - 2 lb

How to make squash casserole:

In saucepan, cook sliced squash and onion in boiling salted water for 5 minutes; drain. Combine cream of mushroom soup and sour cream in small bowl and add to drained squash. Stir in shredded carrot. Combine stuffing mix with melted butter and spread half of stuffing mix in bottom of 12 x 7 1/2 x 2-inch baking dish. Spoon vegetable mixture on top. Sprinkle remaining stuffing over top of vegetables. Bake in 350° oven for 25 to 30 minutes. Makes 6 to 8 servings.
