Squash casserole
Ingredients/Components
- pkg - 1 oz
- sour cream - 1 c
- melted butter - 1/2 c
- shredded carrots - 1 c
- chopped onion - 1/4 c
- can condensed cream of chicken soup - 1 item
- yellow summer squash, sliced - 2 lb
How to make squash casserole:
In saucepan, cook squash and onion (chopped) in boiling, salted water for 5 minutes, then drain. Combine cream of chicken soup and sour cream. Stir in shredded carrots and fold in squash and onion. Add butter to stuffing mix. Spread half the stuffing mixture in bottom of baking dish. Spoon vegetable mixture on top. Sprinkle remaining stuffing over vegetables.
