Spring vegetable soup
Ingredients/Components
- salt - 1 item
- butter - 3 Tbsp
- light cream - 1/4 c
- pepper - 1 item
- green onions - 4 item
- carrots, thinly sliced - 2 item
- potatoes, peeled and thinly sliced - 2 item
- frozen or fresh peas - 1/2 lb
How to make spring vegetable soup:
Saute onions in butter about 2 minutes. Add potatoes and carrots and saute 2 minutes longer. Add 3 cups water and 1 teaspoon salt. Bring to a boil and simmer 12 minutes or until vegetables are tender. Add peas and cook 5 minutes longer. Add cream.
