Ingredients/Components

  • salt - 2 oz
  • water - 1 pt
  • diced cucumbers, cleaned - 12 lb
  • diced tomatoes fresh, no cores or bad spots - 4 lb
  • diced yellow onions fresh - 2 lb
  • sugar scale by weight
  • Mike Rose special marinade or 1 qt - 7 c

How to make spring salad:

Marinade:4 oz. sugar (scale by weight)2 oz. salt7 c. Mike Rose special marinade or 1 qt. oil and vinegar and 3 c. cucumber marinade1 pt. water Step 1: Mix marinade thoroughly in separate container and chill.

Step 2: Completely peel cucumbers and dice on Ditto using Blade C-10 and M-20.

Step 3: Slice tomatoes on Slicer #22 (use only firm tomatoes) and dice by hand making small 1/2-inch cubes.

Step 4: Peel onions and dice on Ditto Blade C-6 and M-10 (standard chopped onions).

Step 5: Place cucumbers, tomatoes and onions in large Lexan mixing pan. Pour marinade over vegetables. Mix gently by hand to get thorough blending of all ingredients. Must bring to thorough, complete chill. Shelf Life: 2 days.

Production Time: 20 minutes. Recipe Yield: .93 ounces. Cost Per Ounce: .235. Cost Per Serving: .0212.

Note: This product must be served extra cooled. Tomatoes must be firm and fresh. Do not mush up.
