Ingredients/Components

  • sugar - 1 c
  • baking soda - 1 Tbsp
  • dark corn syrup - 1 c
  • melted chocolate - 1 item
  • dark vinegar - 1 Tbsp

How to make sponge candy:

Combine sugar, corn syrup and vinegar in large heavy 6 quart saucepan. Stir and cook over medium heat until sugar dissolves.

"WASH": Cover pan for one minute to allow steam to wash down the sugar crystals that cling to the side of the pan, or wipe down crystals with damp cloth.

Continue cooking without stirring until 300° on candy thermometer (hard crack). Remove from heat and quickly stir in baking soda (don't over-mix). Pour into buttered 9 inch square or round pan. Cool ten minutes. Break into pieces.

Can be hand-dipped in melted chocolate. Refrigerate to set chocolate.
