sifted flour - 1/2 c
salt - 1/4 tsp
baking powder - 1/2 tsp
eggs, separated - 4 item
cream of tartar - 1/4 tsp
sugar - 3/4 c
lemon juice - 1/2 tsp
finely grated lemon rind - 1/2 tsp
Sift flour with salt and baking powder
sour cream - 2 Tbsp
confectioners sugar - 1/4 c
strawberry juice - 2 Tbsp
pkg - 1 oz

How to make sponge cake roll:

Line a 10 x 15 x 1-inch baking pan with waxed paper. Sift flour with salt and baking powder. Beat egg whites until foamy. Add cream of tartar; continue beating until stiff but not dry. Add sugar, a tablespoonful at a time, while continuing beating. Beat egg yolks with a fork. Add lemon juice and rind. Fold yolks into egg whites, mixing well. Fold in flour by tablespoonfuls. Pour batter into paper lined pan. Bake in moderate oven (375°) for 12 to 15 minutes. Turn cake at once on a tea towel which has been covered with confectioners sugar. Quickly peel off waxed paper and cut off any crisp edges.

Beginning at the narrow edge of cake, gently roll it and the towel together. Cool on a cake rack, then unroll cake carefully. Spread cake with Strawberry Cream Filling; cover with drained strawberries, reserving some to decorate top of roll. Roll up cake again. Sift confectioners sugar over top; decorate with strawberry pieces and mint leaves. Serves 8.Strawberry Cream Filling:3 (3 oz.) pkg. cream cheese2 Tbsp. sour cream1/4 c. confectioners sugar2 Tbsp. strawberry juice1/4 tsp. lemon juice1 (10 oz.) pkg. frozen strawberry halves, drained Soften cream cheese with a fork. Add sour cream and sugar slowly; blend well. Stir in juices.

This recipe calls for frozen strawberries, but we have tried it with other frozen fruits, like peaches, raspberries and cherries, and it is just as beautiful and just as delicious. Fresh fruits can also be used, but then you will have to adjust your sw
