Ingredients/Components

  • eggs - 7 item
  • vanilla - 1/2 tsp
  • sifted flour
  • cream of tartar - 1/4 tsp
  • lemon juice - 2 Tbsp
  • liquid sweetener - 3 tsp
  • orange rind - 1 Tbsp
  • orange juice unsweetened - 1/2 c

How to make sponge cake:

Separate eggs. Beat yolks until light. Mix together orange juice and rind, sweetener, vanilla and lemon juice. Add to egg yolks. Beat until fluffy (about 7 to 10 minutes). Combine flour and salt. Gently sprinkle flour mixture over egg yolks, folding in a little at a time.

Beat egg whites until foamy. Add cream of tartar. Beat until stiff. Fold egg mixture gently into egg whites. Blend together. Pour into 9-inch ungreased tube pan. Bake at 325° for 65 minutes.

Fat: 4 grams. Yield: 12 servings.
