Split pea soup
Ingredients/Components
- butter or margarine - 2 Tbsp
- salt - 1/2 tsp
- water - 8 c
- chopped celery - 1 c
- large onion, chopped - 1 item
- slices bacon - 2 item
- chicken bouillon granules - 1 tsp
- sliced carrot - 1 c
- light cream half and half - 1/2 c
- dry split peas - 1 lb
- meaty ham bone or 2 ham hocks - 1 item
How to make split pea soup:
Rinse peas; place in pan. Add water, ham bone or hocks, onion, bouillon, salt and pepper. Bring to a boil. Reduce heat, cover and simmer 1 1/2 hours, stirring often. Remove ham bone or hocks; remove and chop meat. Discard bones. Return meat to soup. Add carrot and celery. Simmer 30 minutes. Cook bacon until crisp; drain and crumble. Stir bacon, light cream and butter into soup; heat through. Makes 8 servings.Recipe categories: < 4 hours, Soups & stews, 3 steps or less.
