Spinach tart



  • sugar - 1/4 tsp
  • butter or margarine - 1/2 c
  • salt - 1/2 tsp
  • nutmeg - 1/8 tsp
  • ice water - 1/4 1/2
  • finely chopped onion - 2 Tbsp
  • sliced mushrooms - 1 c
  • sea salt - 1/4 tsp
  • freshly ground black pepper - 1/4 tsp
  • cream or milk
  • rosemary, crushed - 1/4 tsp
  • few grains cayenne pepper - 1 item
  • grated Swiss or Cheddar cheese - 1 c
  • sweet butter or margarine - 3 Tbsp
  • whole wheat flour or 1/2 whole wheat and 1/2 white flour - 1 c
  • shredded fresh spinach leaves or other greens
  • whole wheat flour or white flour - 1 Tbsp
  • eggs, lightly beaten use 6 if small eggs - 4 item

How to make spinach tart:

Filling:2 c. shredded fresh spinach leaves or other greens2 Tbsp. finely chopped onion1/4 tsp. rosemary, crushed1 c. sliced mushrooms3 Tbsp. sweet butter or margarine1 Tbsp. whole wheat flour or white flour1 c. grated Swiss or Cheddar cheese1 1/2 c. cream or milk4 eggs, lightly beaten (use 6 if small eggs)1/2 tsp. salt1/4 tsp. freshly ground black pepper few grains cayenne pepper1/8 tsp. nutmeg1/4 tsp. sugar Pastry: Place the flour and salt in a bowl. Cut in the butter until well blended. Add ice water, one tablespoon at a time, working water in until mixture feels wet and almost slimy. (Whole grain flours absorb moisture more slowly than regular bleached flours.) Roll into a ball; chill for 30 minutes.

Preheat oven to 325°. Roll the chilled dough to 1/4-inch thickness between sheets of wax paper, making a circle that will fit a 10-inch pie plate. Peel the paper off one side and press dough into an oiled 10-inch pie plate. Carefully peel off top layer of paper. Bake for 5 minutes.

Filling: Meanwhile, to make the filling, place spinach, onion and rosemary in a saucepan and cook, covered, until wilted. Drain. Place in an electric blender; blend until smooth, using a tablespoon or two of the cooking liquid, if necessary. Increase oven heat to 400°. Saute the mushrooms briefly in the sweet butter. Sprinkle with flour and cook, stirring, for 1 minute. Place mushroom mixture in bottom of partially cooked pie shell. Top with spinach puree; sprinkle with cheese. Beat cream
