Ingredients/Components

  • milk - 1/2 c
  • salt - 1/2 tsp
  • flour - 2 Tbsp
  • butter - 2 Tbsp
  • egg whites - 3 item
  • pepper to taste - 1 item
  • egg yolks, beaten - 3 item
  • grated sharp cheese - 1/2 c
  • cooked spinach, chopped fine - 3/4 c

How to make spinach souffle:

Preheat oven to 350°. Make cream sauce of butter, flour and milk. Add sauce to spinach and cheese, and beaten egg yolks; mix. Beat egg whites until stiff, but not dry. Fold into mixture. Pour in buttered casserole. Set in hot water. Bake 30 minutes. Let stand a few minutes after removing from oven. Serves 6.
