Spinach-rice casserole
Ingredients/Components
- eggs, beaten - 2 item
- melted butter - 2 Tbsp
- garlic powder - 1/4 tsp
- minced fresh parsley - 2 Tbsp
- grated Cheddar cheese - 1/2 c
- black pepper - 1/4 tsp
- vegetable broth - 2 c
- brown rice - 3/4 c
- fresh whole wheat bread crumbs - 1/2 c
- fresh spinach, washed and chopped - 1 lb
- finely grated fresh Parmesan cheese - 4 Tbsp
How to make spinach-rice casserole:
Cook for 40 minutes the brown rice and vegetable broth. Prepare the Cheddar cheese, parsley and fresh spinach while rice is cooking. After rice has cooked 30 minutes, preheat oven to 350°. Mix cooked rice with the Cheddar cheese mixture adding garlic powder, black pepper and eggs. Spoon mixture into greased casserole dish. Top with mixture of Parmesan cheese, melted butter and bread crumbs. Bake at 350° for 35 minutes.Recipe categories: Main dish, Casseroles, One Dish meal.
