Ingredients/Components

  • butter or margarine - 2 Tbsp
  • salt - 1/2 tsp
  • whipping cream - 1/2 c
  • Dijon mustard - 1 Tbsp
  • dash of pepper - 1 item
  • minced green onion - 2 Tbsp
  • dash of nutmeg - 1 item
  • shredded Swiss cheese - 1/4 c
  • soft butter or margarine - 1 Tbsp
  • frozen, chopped spinach, cooked and drained - 10 oz
  • 8 or 9-inch partially baked pie shell - 1 item
  • Ricotta, cottage cheese or diced, mild white Brick cheese - 1 c
  • eggs white or 4 brown - 3 item

How to make spinach quiche:

Brush cooked pastry shell with mustard. Saute onions in butter, add spinach and stir over moderate heat to evaporate moisture. Stir in salt, pepper, nutmeg and Ricotta. Taste for seasoning. Blend in eggs and cream. Pour into pastry shell. Sprinkle with cheese and dot with butter. Bake at 375° for 25 to 30 minutes or until set.
