Spinach quiche

Spinach quiche



  • flour - 1/2 c
  • nutmeg - 1/4 tsp
  • frozen spinach - 1 pkg
  • sharp Cheddar cheese, grated - 1 c
  • to 2 eggs - 1 item
  • Parmesan or Romano cheese - 8 Tbsp
  • pie crust frozen or homemade - 1 item
  • Ricotta cheese skim or whole - 1 pt

How to make spinach quiche:

Thaw spinach just enough to make a ball. Squeeze until most all of juice is out. Mix spinach with Ricotta cheese. Add nutmeg and 1 egg (well beaten). Fold in 4 tablespoons of Parmesan cheese and 1/2 cup flour. Add Cheddar cheese and blend well. If mixture seems too dry, add another well beaten egg (I always do). Put mixture in pie shell (unbaked) and sprinkle remaining 4 tablespoons Parmesan cheese on top. Bake in 350° oven for 35 to 45 minutes, until brown on top (45 minutes if 2 eggs are used). Enjoy!
