  • grated Parmesan cheese - 1/4 c
  • chopped fresh parsley - 2 3
  • olive oil - 1 Tbsp
  • tomato sauce - 6 c
  • part-skim Ricotta cheese - 1 lb
  • garlic cloves, minced - 2 item
  • medium onion, chopped - 1 item
  • freshly ground black pepper - 1/4 tsp
  • egg whites, beaten - 2 item
  • part-skim Mozzarella cheese, grated - 6 oz
  • nonstick vegetable cooking spray - 1 item
  • lasagna noodles preferably whole wheat - 1/4 lb
  • fresh spinach, chopped and packed about 2 c
  • tofu, drained and crumbled optional - 1 lb

How to make spinach lasagna:

Saute the onion and garlic in olive oil, adding water as needed to keep from sticking. Combine the Ricotta, tofu (if used), Parmesan, spinach, egg whites, black pepper, parsley and sauteed onion and garlic, mixing well. Cook the lasagna according to pack
