Ingredients/Components

• eggs - 4 item
• salt - 1/2 tsp
• oleo, melted - 1 item
• cottage cheese - 6 oz
• medium onion, grated - 1 item
• box Jiffy cornmeal muffin mix - 1 item
• box frozen spinach, drain and chopped, squeeze out liquid

How to make spinach cornbread:

Preheat oven to 400°. In bowl mix all ingredients together and pour into a greased 9 x 13 inch baking pan. Bake for about 30 minutes until done.
