  • pkg - 1 oz
  • milk - 1 c
  • salt - 1 tsp
  • flour - 1 c
  • nutmeg - 1/4 tsp
  • eggs, beaten - 2 item
  • baking powder - 1 tsp
  • butter, melted - 4 Tbsp
  • chopped onion - 1/2 c

How to make spinach brownies:

Drain spinach in a colander and squeeze out moisture; combine cheese, spinach and onion in a large bowl, mixing well. Stir salt, baking powder and nutmeg into flour. Then mix with spinach. Mix together beaten eggs, melted butter and milk. Stir into other ingredients. Preheat oven to 350°.

Line a 13 x 9 x 2-inch baking dish with aluminum foil; spray with Pam or other similar product to ensure nonstick result and pour in spinach mixture. Bake about 35 minutes, at 350° until lightly browned.

Remove from oven and cool completely. Remove from foil lining and cut into 2-inch squares.

These can be prepared ahead and frozen until wanted. Simply lift them still uncut out of their baking pan, aluminum foil liner and all, and wrap for freezer. To serve, thaw and reheat on hot plate.

Makes about 40 small squares.
