Spinach balls with mustard sauce
Ingredients/Components
- sugar - 1/4 c
- eggs - 3 item
- pkg - 2 oz
- stick butter, melted - 1 item
- egg yolk - 1 item
- grated Parmesan cheese - 1 c
- white vinegar - 1/2 c
- scallions, finely chopped - 4 item
- powdered dry mustard - 1/2 c
- stuffing mix, crushed - 2 c
- dash of freshly grated nutmeg - 1 item
How to make spinach balls with mustard sauce:
Combine spinach, stuffing mix, cheese, butter, scallions, 3 eggs and nutmeg. Shape into 1-inch balls. Refrigerate or freeze until ready to use. Bake on greased baking sheet at 350° until golden brown, 10 to 15 minutes, if thawed, and 20 minutes, if frozen. Makes 70 balls.For sauce: Combine mustard and vinegar and let stand, covered, for 4 hours at room temperature. Mix sugar and egg yolk in small saucepan; add mustard mixture and cook over low heat, stirring constantly, until slightly thickened. Cool, cover and serve at room temperature with warm spinach balls.
