Spinach and rice



Ingredients/Components
- water - 1/2 c
- can stewed tomatoes - 1 item
- olive oil - 1 item
- large onion, chopped - 1 item
- rice - 1 c
- fresh spinach or canned spinach - 1 item
How to make spinach and rice:
In a saucepan, saut onion in olive oil and add rice, stirring occasionally, for about 20 minutes. Add water and cook on low heat until rice is almost done. Wash and chop spinach and add to rice mixture. Also to this mixture, add stewed tomatoes. Cover and cook for another 10 to 15 minutes.Recipe categories: Side dish, Main dish, Rice.
