Spicy zucchini bars
Ingredients/Components
- cinnamon - 3/4 tsp
- eggs - 2 item
- vanilla - 1 tsp
- pkg
- packed brown sugar
- baking soda - 2 tsp
- margarine or butter, softened - 1/2 c
- powdered sugar - 2 c
- raisins - 1 c
- cloves - 1/4 tsp
- plus 2 Tbsp - 1/4 c
- ground nutmeg - 1/2 tsp
- whole wheat flour - 2 c
- shredded zucchini
How to make spicy zucchini bars:
Cream Cheese Frosting:1 (3 oz.) pkg. cream cheese, softened1/4 c. plus 2 Tbsp. margarine, softened1 tsp. vanilla2 c. powdered sugar Heat oven to 350°. Grease a 13 x 9 x 2-inch pan. Mix brown sugar, margarine, eggs and vanilla in large bowl. Stir in flour, baking soda, cinnamon, nutmeg and cloves. Stir in zucchini and raisins. Spread in pan. Bake 25 to 35 minutes; cool. Frost with Cream Cheese Frosting. Cut into 2 x 1 1/2-inch bars. Yields 32 bars.Frosting: Mix cream cheese, margarine and vanilla. Gradually beat in powdered sugar until smooth spreading consistency.
