Spicy roasted potatoes



  • dry mustard
  • paprika - 1/4 tsp
  • clove garlic, minced - 1 item
  • Dijon mustard
  • large potatoes - 2 item
  • olive oil - 1 tsp
  • red pepper - 1/8 tsp
  • dried tarragon - 1 tsp

How to make spicy roasted potatoes:

In a medium bowl, mix mustards, oil, garlic, tarragon, paprika and red pepper into a smooth paste. Cut unpeeled potatoes into 1-inch chunks. Pat dry with paper towel and toss with mustard mixture until coated.

Arrange potatoes in single layer on lightly greased baking pan. Bake at 425° for 30 to 35 minutes or until chunks are tender.
