Spicy lentil soup
Ingredients/Components
- salt - 1 tsp
- water - 5 c
- dark brown sugar - 2 tsp
- pepper - 1 tsp
- chicken broth - 5 c
- curry powder - 1 tsp
- ketchup - 2 Tbsp
- olive oil - 1/4 c
- ground cumin - 1 tsp
- garlic cloves, minced - 4 item
- dry sherry - 1/2 c
- bay leaves - 2 item
- dried thyme, crumbled - 1/2 tsp
- lentils, picked over and rinsed - 2 c
- coarsely chopped canned plum tomatoes - 3 c
How to make spicy lentil soup:
In a kettle, cook the onions in the oil over moderate heat, stirring occasionally, until they are softened. Add garlic, celery and carrots and cook the vegetables, stirring occasionally for 10 to 15 minutes until they are softened.Add the curry powder, cumin, salt, pepper, thyme, water, broth, bay leaves, brown sugar, ketchup, tomatoes, lentils and sherry. Simmer the soup for 2 hours or until the lentils are tender. Discard the bay leaves. Makes about 10 cups, serving 8.
