  • milk - 1/4 1/3
  • stick butter or margarine - 1 item
  • jalapeno peppers, finely chopped - 3 item
  • cans Shoe Peg corn - 2 item

How to make spicy corn:

In skillet over low heat, melt cream cheese and butter with milk until soft and creamy. Remove from heat. Add drained corn and jalapenos. Mix thoroughly and put in baking dish. Bake at 350° for 15 to 20 minutes or until bubbly.

I have substituted whole kernel yellow corn, low-fat cream cheese and have even just left in my electric skillet on simmer. It does not affect this recipe. Adjust jalapeno peppers to taste (more or less).

This can be doubled and it "travels" nicely in a crock-pot.
